I like Heidi Swanson's recipes too!! Have you tried her Otsu recipe? I highly recommend it. Also on her website, you should try her miso chopped salad.

the fries were fantastic (first frying done at 325, second at 375, dusted with a little sea salt and cayenne pepper). burger was good but the buns! sigh. i sliced some crusty loaf i had made. crusty loaf, though tasty, interferes with the ease of biting into a burger since the crust is so nice and crusty instead of soft and spongy as good hamburger buns should be. that's okay. lesson learned.
